1. Add 1.5 cups water to a pot and boil. 2. Add rice and juice of 2 limes and simmer for about 20 minutes. 3. Add 2 tablespoons olive oil and chopped cilantro to the rice. 4. In a separate pan over medium heat, add olive oil. 5. Cut chicken into cubes and season with cumin and paprika. 6. Add garlic and chicken to the pan and squeeze 1/2 of the remaining lime into the pan. 7. Let chicken cook for about 4 minutes. 8. Add rice to bowls and serve with avocado, tomato, salsa of your choice, and add lime and cilantro on top.
