1. Heat a large wok over medium high heat. Add a drizzle of olive and sesame oil and cook the chicken for 3-4 minutes. 2. Add onion and garlic, sauté for another 2 minutes until fragrant. 3. While the chicken cooks, boil the noodles according to package instructions. Drain and set aside. 4. In a small bowl, whisk together the sauce ingredients. 5. Microwave broccoli for 1 minute to soften, then add to wok with shaved carrots. 6. Push the chicken and veggies to one side of the pan. Crack the eggs into the empty space, scramble until just set, then stir everything together. 7. Add cooked noodles, sauce, and peanuts to wok. Toss well to combine. 8. Add your favorite toppings such as cilantro, fresh lime, peanuts, green onion, and crispy jalapeños.
