Instructions
1. Chop sausage and sauté with onion and jalapeño for about 5 minutes. 2. Whisk eggs in a bowl, then add to the pan with feta. Scramble until just set. 3. Transfer egg mixture to a plate. 4. Microwave tortillas for 20 seconds to soften. 5. Add a spoonful of eggs and a slice of avocado to each tortilla, then fold into a mini wrap. 6. Place folded side down in the pan. Cook until golden, then flip and brown the other side.
