Instructions
1. Prepare the Pico de Gallo: Mix the chopped onion, jalapeño, lime juice, salt, tomatoes, and cilantro in a small bowl. 2. Make the Cilantro Lime Rice: Combine the cooked rice, lime juice, cilantro, and salt in a bowl. 3. Cook the Blackened Salmon: Season salmon fillets with blackened seasoning and cook in a pan with olive oil over medium heat for 3-4 minutes per side, until done. 4.
