1. Dice mangoes, red bell pepper, red onion, and tomato. Mix together with fresh cilantro, lime juice, honey, and salt to make the salsa.
2. Pat the salmon dry with a paper towel.
3. Mix paprika, garlic powder, cumin, chipotle powder, and cayenne pepper together to make the blackening seasoning.
4. Sprinkle and rub the blackening seasoning evenly over the salmon.
5. Heat olive oil in a large pan over medium-high heat.
6. Place the salmon in the pan, skin side up, and cook for 4-5 minutes per side until cooked through and a blackened crust forms.
7. Serve salmon over a bed of jasmine rice and top with mango salsa.
