What you need

tbsp olive oil
tbsp red wine vinegar

tsp red pepper flake

cup jasmine rice

oz feta

tbsp oregano

tsp paprika

cup greek yogurt
tbsp garlic
Instructions
1. In a bowl, mix Greek yogurt, 1 tablespoon olive oil, juice of ½ lemon, 1 teaspoon oregano, paprika, and garlic. 2. Score the chicken breasts and coat them in the mixture. Let it marinate while you make the salad. 3. Dice tomato, cucumber, avocado, and red onion. Toss with 2 tablespoons olive oil, red wine vinegar, juice of ½ lemon, crumbled feta, 1 teaspoon oregano, salt, and pepper. 4. Air fry chicken at 350°F for 15 minutes or until fully cooked. 5. Serve over cooked jasmine rice and top with the Mediterranean salad. Finish with extra crumbled feta and a sprinkle of oregano.
